Here is my take on Terra Breads’ Red Pepper Breakfast Sandwich
Sautee red pepper slices in olive oil til softening and getting nice brown bits. Could toss in some chopped garlic if you feel inclined and can be bothered. Tear up as many leaves of clean and fresh basil as desired leave aside. Put asiago (or mozza/provolone etc.) on a nice panino bun or foccacia (something salty and full of olive oily goodness. I use the rosemary and rock salt panini/pane bianca from Terra Breads in Vancouver of course!) and pop into the oven to warm/toast the bread and melt the cheese (they use a panini press but this gets you a similar result). Make scrambled eggs as you would in butter or olive oil. I like to add a dash of cream, cracked pepper, and smoked salt into mine before whisking.
Put scrambled eggs or mini omlette on top of the melted cheesey bread. Top with peppers and basil. Squish down with the top piece of bread as best you can without burning your hands if it just came from the oven! Bring a fork cause most of the insides will fall out. Just being honest!
NOTE: I use about 10 x the amount of basil and red peppers in my version. I just love me some extra veg!
